
Yesterday, I was attempting to make some Paleo whipped cream to put over my berries. Unfortunately, after leaving my coconut milk in the refrigerator for 24 hours, it didn’t thicken. Turns out it was a blessing in disguise.
Primal Chocolate Fondue
Ingredients
- 1 can full fat coconut milk
- 2 tbsp organic vanilla
- 1.4 oz 70% or greater dark chocolate (I used 5 pieces of Valor 72% Sugar Free Dark Chocolate with Cocoa Nibs).
- 3/4 C Dutch pressed cocoa powder
- Cinnamon, to taste
- Fruit for dipping!
Step 1: Put the coconut milk in a medium-sized pot and turn the stove on medium.
Step 2: Mix in the vanilla and cinnamon. Bring to a simmer.
Step 3: Chop up the chocolate into small pieces. Stir into the pot 1/5th at a time, making sure the chocolate is entirely melted before putting in the next batch.
Step 4: Mix in the cocoa powder. Use more or less to make the fondue thicker or thinner.
Step 5: Remove from heat and enjoy! Last night I had grapes, blackberries, and bananas in the fondue, and I plan to reheat the leftovers tonight.

Careful, results CAN be messy!
